Why ingredient density matters

When a recipe says "1 cup of flour" it's telling you a volume. But flour is sold by weight (grams). The same one-cup measure contains 120 g of all-purpose flour, 200 g of sugar, or 227 g of butter, because each ingredient packs into the cup differently. This is why bakers prefer weighing ingredients: a gram is always a gram, but a cup of flour can vary by 20% or more depending on how packed it is.
