Oven temperature systems
American recipes use Fahrenheit. European, Australian, and most other international recipes use Celsius. British recipes (and some older European ones) sometimes use the Gas mark system, which uses numbers from 1/4 (warmest setting on a gas oven) up to 10 (highest).
Common oven temperatures
- 250F / 120C / Gas mark 1/2: very low, slow cooking
- 300F / 150C / Gas mark 2: low, slow roast
- 325F / 165C / Gas mark 3: moderate-low
- 350F / 180C / Gas mark 4: moderate (most baking)
- 375F / 190C / Gas mark 5: moderate-hot
- 400F / 200C / Gas mark 6: hot (most roasting)
- 425F / 220C / Gas mark 7: very hot
- 450F / 230C / Gas mark 8: very hot (pizza, broiled meats)
- 500F / 260C / Gas mark 10: as hot as most home ovens go
Fan / convection ovens
If your oven has a fan or convection setting and a recipe was written for a conventional oven, reduce the temperature by about 25 F (15-20 C) or reduce the cooking time by about 20 percent. Many modern recipes specify which mode they assume; check before adjusting.
